L’azienda agricola Il Fiocchino è specializzata da più generazioni, nell’allevamento degli ovini.
L’ambiente è quello collinare dei Monti Vulsini, che circondano il lago di Bolsena; i pascoli sono erbai misti controllati.
I prodotti caseari, pecorino e ricotta, sono lavorati artigianalmente con premitura e salatura a mano; si inseriscono nella fascia di produzione dei prodotti tipici, nel rispetto dell’ambiente, tanto da essere classificati come “formaggi del pastore”.
